Suirakuten means heaven of Tipsy Delight. Akitabare is brewed in Akita Prefecture in the northern Tōhoku region, which has the highest per capita sake consumption in Japan. The brewery prides itself on its traditional methods and the purity of the water from which the sake is made. The result is a range of clean, reduced sakes with excellent balance and structure. Much of the work is done by hand in small batches, and some of the equipment has been in continuous use for nearly a century. To bring out its characteristic qualities, it is aged for two years after brewing.
