Sansaro, Chef Matsui, who comes from the <a href=\"https:\/\/de.wikipedia.org\/wiki\/Pr\u00e4fektur_Aichi\" target=\"_blank\" rel=\"noopener\">Aichi Prefecture<\/a> is from Munich, presents a special The dish originated about 150 years ago when \"Hitsumabushi\" was first served in a restaurant called \"H\u014draiken\" (\u84ec\u83b1\u8ed2), located in front of Atsuta Jingu Shrine.<\/p><p>Atsuta Jingu Shrine is an ancient much-visited pilgrimage site. It is one of the <a href=\"https:\/\/de.wikipedia.org\/wiki\/Throninsignien_Japans\" target=\"_blank\" rel=\"noopener\">three sacred Japanese throne insignia<\/a>, a sword called \"Kusanagi-no-Tsurugi\" \u8349\u8599\u5263) inherited by the Japanese emperor since ancient times.<\/p><p>This pilgrimage site is located on the Tokaido artery, the main road connecting T\u014dky\u014d and Ky\u014dto. Eel has always been a specialty in the area and various eel dishes are typical of local cuisine in Aichi Prefecture.<\/p><p>The accompanying sauce is also widely used in this area. Thus was born the name \"Hitsu-mabushi\" , mixed together (\u307e\u3076\u3059 mabusu - mixed in Japanese) and served in a hitsu.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-31a0430 title-h3 elementor-widget elementor-widget-heading\" data-id=\"31a0430\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">Three flavors in one dish<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-229cbc2 text-edit elementor-widget elementor-widget-text-editor\" data-id=\"229cbc2\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>There is a special way to eat \"Hitsumabushi\" to fully enjoy it.<\/p><p>1. divide the whole in a slightly deep plate into about four parts:<\/p><p>2. in the first part, check how well eel, egg and rice go together - that is, a few bites of eel, egg and rice \"pure\".<\/p><p>3. next, add the spices (scallions, seaweed and yuzu kocho) on top of the bowl to create a flavor contrast. But be careful not to add too much, because the <a href=\"https:\/\/www.sushiya.de\/en\/washoku\/shokuzai\/yuzu\/#yuzukosho\" target=\"_blank\" rel=\"noopener\">Yuzu Kocho<\/a> is quite sharp.<\/p><p>4.
