Some guests think of sake as being drunk from a small, traditional sake cup.<\/p><p>Many premium sake, especially <a href=\"https:\/\/www.sushiya.de\/en\/sake\/sake-kategorien\/ginjo\/\">Ginj\u014d<\/a> and <a href=\"https:\/\/www.sushiya.de\/en\/sake\/sake-kategorien\/daiginjo\/\">Daiginj\u014d<\/a>, but are brewed with great care to develop a wonderful aroma.<\/p><p>That's why we always serve our sake flight in a nosing glass, so that the flavors of the individual sakes can be better perceived during the individual tasting.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-645c9cc title-h2 elementor-widget elementor-widget-heading\" data-id=\"645c9cc\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Imayo Tsukasa \"Junmai Daiginj\u014d\"\n<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-10e693f text-edit elementor-widget elementor-widget-text-editor\" data-id=\"10e693f\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>The first one we would like to introduce is the Imayo Tsukasa Junmai Daiginj\u014d.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p><p>Imayo Tsukasa Brewery is located in a small town in Niigata Prefecture, a region known for its elegant, light and dry sake. Focusing exclusively on the production of Junmaishu (sake brewed only from rice, K\u014dji and water, without the addition of brewing alcohol), the sake produced by this brewery is careful to preserve the full flavor of the rice.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p><p>The Junmai Daiginj\u014d is made from locally produced <a href=\"https:\/\/www.sushiya.de\/en\/sake\/sake-herstellung\/sake-reissorten\/\">Gohyakumangoku sake rice<\/a> produced and has a gentle sweetness reminiscent of Japanese fine sweets.<\/p><p>Its light and airy texture and clean aftertaste are very pleasant to drink.<\/p><p>It goes well with light appetizers and <a href=\"https:\/\/www.sushiya.de\/en\/sushi\/\">Sushi<\/a> with white fish and shrimp.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-39ee76f title-h2 elementor-widget elementor-widget-heading\" data-id=\"39ee76f\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Nanbu Bijin \"Ginj\u014d\"<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-c1a9578 text-edit elementor-widget elementor-widget-text-editor\" data-id=\"c1a9578\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>The next is the <a href=\"https:\/\/www.sushiya.de\/en\/sake\/sake-kategorien\/ginjo\/\">Ginj\u014d<\/a> from the Nanbu Bijin.<\/p><p>Iwate Prefecture, where this brewery is located, is home to the famous Nanbu T\u014dji, one of the three largest guilds of brewmasters in Japan.<\/p><p>The Nanbu T\u014dji are known for their skill and knowledge in making<a href=\"https:\/\/www.sushiya.de\/en\/sake\/sake-herkunft\/regionen\/#tohoku\"> high quality sake in the cold northern regions<\/a>. The award-winning brewery Nanbu Bijin puts great world on \"freshness\". They are constantly researching how to preserve the freshness of sake in the bottle and apply this to product development.<\/p><p>Normally sake is pasteurized twice, but this sake is pasteurized only once, so it is \"<a href=\"https:\/\/www.sushiya.de\/en\/sake\/sake-kategorien\/namazake\/\">Nama-Choz\u014dshu<\/a>\" (freshly aged sake) called. It has a particularly fresh taste that goes perfectly with sashimi.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-94efb88 title-h2 elementor-widget elementor-widget-heading\" data-id=\"94efb88\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Amabuki Junmai Ginj\u014d \"Strawberry Blossom\"<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-120033d text-edit elementor-widget elementor-widget-text-editor\" data-id=\"120033d\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>The last sake in this flight has a very spring-like name: \"Strawberry Blossom\". It is a <a href=\"https:\/\/www.sushiya.de\/en\/sake\/sake-kategorien\/junmai-ginjo\/\">Junmai Ginj\u014d<\/a> of the Amabuki Brewery in Saga Prefecture in the Ky\u016bsh\u016b region.<\/p><p>Sake is usually <a href=\"https:\/\/www.sushiya.de\/en\/sake\/sake-herstellung\/hefe-koji\/\">Brewed with yeast<\/a>which is grown from sake mash. Amabuki is one of the few breweries that use to manufacture sake with yeast from different flowers. This <a href=\"https:\/\/www.sushiya.de\/en\/sake\/sake-kategorien\/junmai-ginjo\/\">Junmai Ginj\u014d<\/a> is brewed, as the name suggests, with strawberry blossom yeast.<\/p><p>You will enjoy the fresh taste and the fruity-sweet aroma that rises as soon as you pour a glass. Because the Amabuki Strawberry Blossomi is a <a href=\"https:\/\/www.sushiya.de\/en\/sake\/sake-kategorien\/namazake\/\">Namazake, a raw, unpasteurized sake<\/a>.
