At the request of a special Japanese guest, our Chef Riichiro Matsui has designed a small, special omakase menu of four courses for Friday, August 18, 2023.

If you are quick, you will have the opportunity to try this menu as well - we have prepared another limited edition.

We were able to offer a spontaneous omakase to a few guests on our terrace in August 2023

Omakase "Yosuzumi

"Yosuzumi" means cooling down at night in summer to avoid the heat. On summer nights, people in Japan often go out of their houses to cool off at night.

In haiku, it's a seasonal word (kigo: 季語) for summer. Japanese love puns and wordplay - and culinary-savvy Japanese immediately recognize that our Chef Matsui has given himself special menu to create a small but delicious menu.

壱の肴 真鯛の笹寿司

焙じ茶豆乳羹、叩き梅、銀餡

赤烏賊とカシューナッツの紫蘇ジェノベーゼ和え

無花果のフライ、豆腐マヨネーズ

明太子のだし巻き玉子

弍の肴 活け鰻白焼の天麩羅 酢醤油

茄子、エリンギ、ヤングコーンの湯葉揚げ

焼き玉葱、焼き十万十

山椒のチュイル

参の肴 和牛の醤油昆布締め、葱粥

茗荷と胡瓜の浅漬け

肆の肴 握り寿司

鮪中とろ 帆立貝柱 鰹の叩き

1st gear

Sasa sushi sea bream
Soy milk jelly with Hōjicha flavor, whipped ume plum and dashi
Squid and cashew nuts with shiso genovese sauce
Fried fig with tofu mayonnaise
Dashimaki egg omelet with spicy cod roe

 

The first course of our Yosuzumi Omakase

2nd gear

Tempura of grilled fresh eel, vinegar soy sauce
Fried eggplant, eringi mushroom and young corn wrapped in yuba.
Grilled onion, grilled tomato

3rd gear

Grilled Wagyu beef marinated in soy sauce, seasoned with kombu, leek porridge sauce.
Pickled myoga and cucumber

4th gear

Nigiri sushi tuna, scallop and fried bonito
Arajiru style miso soup Miso, ginger, chopped scallions.

Optional dessert:

Upon request, guests of the Omakase - and others - were served a naturally homemade anmitsu, a typical Japanese summer dessert, on these hot evenings.

Anmitsu: homemade vanilla ice cream, homemade fruit juice jelly made from organic apple-mango and other juices, red bean paste, fresh fruit and other ingredients.
